
Dandelion Jelly

Recipe:
2 Cups of packed dandelion petals
4 Cups organic sugar
1 Pack of pectin
4 Cups water
2 Tablespoons fresh lemon juice
Directions:
Pick your dandelions & discard any green leaving only the yellow petals. Boil water, once boiling, remove from stove & steep the petals for 1-24 hours. If you do more than 1 hour, place it in the fridge until you're ready to use. Strain petals from water & place in a pot & boil. Once it's a slow rolling boil, put in the lemon juice & pectin pack. Use a wisk and stir. Once it's at a rolling boil, add your sugar and wisk. Bring it back to a boil and let it boil for 1-2 minutes. Turn off & put in sterile jars. Make sure the wipe the rim after filling.
You can at this point put it in the fridge for up to 2 weeks or water bath. If water bathing, let it go for 10 minutes.
Let cool & enjoy! It can take up to 48 hours for it to sit up.
